Slow Cooker Meatloaf

Slow Cooker Meatloaf with beef mince, a delicious low-carb, gluten-free, high-protein, and ridiculously easy-to-make recipe to lick your fingers clean. Healthy, packed with amazing flavours, this meatloaf is the very best you can get. A great dish for Easter.

Ingredients

  • 750 g lean ground beef 2 lbs (meat with 5% fat)
  • 1 small onion
  • ¼ cup almond flour
  • 2 tablespoon grated parmesan
  • 2 eggs
  • 1 tablespoon Italian herbs
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • 4 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoon yellow mustard

Instructions

  • Peel and chop the onion finely.
  • In a bowl, add the ground beef, chopped onion, parmesan, eggs, almond flour, herbs, salt and pepper, and mix well to combine.
  • Line the slow cooker with kitchen foil, add the mince beef mixture and press it down well with the back of a spoon.
  • In a small bowl, combine the tomato paste, sauce and mustard, and spread half of it over the meatloaf.
  • Cook on low for 6 hours or on high for 4 hours.
  • Once it's cooked, carefully remove it from the slow cooker by holding the edges of the kithcken foil well (there will be some of the liquid released by the meat), then spread the remaining sauce over.
  • Serve hot or cold.

  • The servings can be adjusted by clicking the number next to Servings.
  • My meatloaf is LOW CARB AND GLUTEN FREE, I replaced the regular breadcrumbs with almond flour, which worked like a dream.  But, if you are not too bothered about a low carb diet, the feel free to use breadcrumbs, that's absolutely fine and it should not change the texture of the meatloaf.
  • There is one thing you must keep in mind when you make a meatloaf in the slow cooker: ALWAYS USE LEAN MEAT. If you use ground beef with a higher amount of fat, you end up with a meatloaf that is covered in grease. Not cool!
  • By any means, you can use a combination of beef and pork if you like, but again, make sure the pork mince is lean as well. The binding ingredients are eggs and almond flour, they also give a lovely taste, so do not omit them.
