Ingredients
  • 2 chicken breasts
  • 400 ml buttermilk
  • 1 cup plain flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp cayenne pepper
  • oil for frying
  • lemon juice (optional)
Instructions
  1. Cut the chicken breasts into strips, then use a meat tenderizer to bash the chicken well.

  2. In a large bowl or plate, mix together the buttermilk, baking powder and spices, coat the chicken strips with the marinate, and refrigerate for at least 4 hours, ideally ovenight.

  3. Coat the buttermilk chicken tenders with flour.

  4. Heat up oil in a frying pan, add the chicken tenders and fry on both sides until golden brown.

  5. Remove from the pan and place the chicken tenders on a plate lined with kitchen paper to remove the excess oil.

  6. Serve hot or cold with lemon juice drizzled over, or with your favourite sauce.
