A lovely baked three-cheese mac and cheese, or what a plate of pure comfort food looks like. Creamy, rich, the best mac and cheese I have every tried.

Ingredients
  • 2 cups macaroni
  • 1 cup full-fat milk
  • 1 cup Cheddar Cheese grated
  • 1/2 cup Red Leicester Cheese grated
  • 1/2 g Mozzarella Cheese grated
  • 1/4 cup breadcrumbs
  • 2 tbsp salted butter
  • 1 tbsp plain flour
  • 1/4 tsp ground black pepper
Instructions
  1. Bring a pan of salted water to the boil.

  2. Add the macaroni and boil on a medium heat until cooked. Any kind of pasta should do, it does not necessarily have to be macaroni.
  3. Remove from the heat, drain the water and set aside.
  4. In a saucepan, melt the butter and add the flour, whisk for a few seconds until you get a smooth paste, then add the milk and continue to whisk until it thickens into a sauce.
  5. Add the Red Leicester Cheese together with half of the Cheddar cheese and mix well.
  6. Preheat the oven to 200 degrees C (390 degrees Faherenheit).

  7. Transfer the cooked macaroni to an oven-proof dish, then pour over the cheesy sauce.
  8. Season well with ground black pepper. No need for salt, since the cheese is salty anyway.
  9. Sprinkle over breadcrumbs, then scatter over the remaining Cheddar cheese together with the mozzarella cheese.
  10. Bake for 10 to 15 minutes until golden.
  11. Serve hot!
