  • 250 g ground (minced) turkey
  • 1 red onion
  • 1 large carrot
  • 3 potatoes
  • 1 tin chopped tomatoes (400 g, 13 oz)
  • 1 tbsp tomato puree
  • 1 tsp Worcestershire sauce
  • 1/2 cup fresh spinach
  • 2 tbsp milk
  • a knob of butter
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • frozen or fresh parsley to garnish
  • 1 cup vegetable stock (broth)
  1. Peel and chop the onion and carrot and heat up the oil in a skillet.

  2. Fry the onion and carrot for 2 minutes stirring occasionally then add the minced turkey and continue to stir until brown.

  3. Cover the mixture with the stock and let it cook on a medium heat until the liquid is absorbed.

  4. Meantime,get on with the mashed potatoes. In a large pan, add the potatoes and boil in salted water until tender.

  5. Drain the water, peel and mash. Add the milk  and butter and mix well until creamy.

  6. Preheat the oven to 200 degrees C (390 Fahrenheit).

  7. Once the stock is absorbed, add the tomato purée and chopped tomatoes to the pan, season with salt, ground black pepper, worcestershire sauce, dried rosemary and oregano and mix well. Let it simmer for a further 5 minutes, then remove from the heat.

  8. Top the ground turkey with the mashed potatoes.

  9. Beat the egg lightly, and brush the top of each cottage pie with it.
  10. Bake in the oven for about 30 minutes or until golden brown. Serve hot!
