Ingredients

  • 1 ½ cup leftover turkey, cubed
  • 1 onion
  • 1 clove of garlic
  • 2 celery sticks
  • 1 carrot
  • 3 potatoes
  • 2 tablespoon vegetable oil
  • 2 cups chicken stock / broth
  • 1 tablespoon tomato puree
  • ½ teaspoon salt
  • teaspoon salt
  • 1 tablespoon chopped dill ( or parsley)

Instructions

  • In a large pot, heat up the oil on a medium heat, add the peeled and chopped onion, and fry until golden.
  • Add the peeled and chopped garlic, carrot, potatoes, and celery stalks, and give it a good stir.
  • Throw in the cubed turkey and stock, place a lid on, and leave it to cook until the veggies are tender.
  • Add the tomato puree, season well with salt and pepper, and add the freshly-chopped dill.
  • Serve hot.

Notes

  • You can add any other veggies you have around: peppers, broccoli, spinach, sweet potatoes, etc. Beans can also make a great addition to this stew.
  • Any leftover stew can be stored into an air-tight container and refrigerated for up to 3-4 days without any problem.
