Steak and Onion Sandwich

Steak and Onion Sandwich made with crusty baguettes, melt-in-your-mouth steak strips, caramelised onion and red peppers on a bed or rocket salad (arugula) and dairylea cheese slices, a fantastic recipe for a hearty lunch. It's quick and very easy to make, and it makes for a nice bite on Game Day, picnics or any other occasion.

Ingredients

  • 3 steak fillets
  • 1 onion
  • 1 clove of garlic
  • ½ red pepper
  • 2 tablespoon vegetable oil
  • 1 cup rocket salad (arugula salad)
  • 2 mini baguettes
  • 2 slices cheese ( I used dairylea cheese)

Instructions

  • Cut the steak fillets into strips.
  • In a frying pan set over a medium to high heat, heat up the oil, add the steak strips, season with salt and pepper, and cook on each side for maximum 2 minutes or until well seared - work in batches if the pan is smaller.
  • Remove from the pan and set aside.
  • In the same pan, add more oil if necessary.
  • Peel and cut the onion julienne, lower the heat to low to medium, and fry the onions until golden.
  • Add the peeled and chopped garlic and pepper cut julienne, and stir fry for 1-2 minutes.
  • Add the steak back to the pan, season to taste with salt and pepper.
  • Cut the baguettes in half horizontally, then arrange the cheese slices, top with salad, then the steak mixture.
  • Serve immediately.

Notes

  • The steak doesn't take long to cook - if you like it medium rare, it doesn't need to cook for longer than maximum 2 minutes. But even if you like it well cooked, it shouldn't take longer than 4 minutes, otherwise the meat is pretty tough.
  • Work in batches if necessary - if you crowd the pan with the steak strips, they won't brown nicely anymore - they cook quickly anyway.
