Healthy Homemade Red White and Blue Popsicles with strawberries, creamy mascarpone, banana and coconut and blueberries, a delicious and refreshing summer treat with no refined sugar added. A great summer recipe for the 4th of July celebrations.

  • 1 cup fresh strawberries
  • 1 cup fresh blueberries
  • 1 cup mascarpone cheese
  • 1/2 cup coconut cream
  • 1 banana
  1. Add the strawberries to a blender together with one tablespoon of coconut cream.

  2. Blitz until smooth, then remove from the blender and transfer to a bowl.

  3. Clean the blender, and add the mascarpone and the remaining cocout cream together with the banana, and blitz again until smooth.

  4. Divide the strawberry mixture between the popsicle moulds, add a few bluberries to each mould, then top with the cream mixture.

  5. Freeze for at least 2 hours. To remove the popsicle from the mould, simply dip it into hot water for 2-3 seconds, it should then come off easily.
