Bubble and Squeak Recipe
Bubble and Squeak made with leftover roast chicken, potatoes, mash, pumpkin and brussels sprouts, the ultimate leftover recipe. The leftovers are roughly chopped and shaped into patties, and shallowed fried until nicely golden and heavenly delicious. Quick and easy, the best way to use up any leftovers you have.

- ½ cup leftover chicken, shredded
- 1 cup leftover mashed potatoes
- 1 cup leftovers roasted potatoes
- ⅔ cup brussels sprouts
- ½ cup roasted pumpkin
- 1 tablespoon vegetable oil for frying
Chop the roasted potatoes, pumpkin and brussels sprouts roughly.
In a bowl, add the mash, shredded roast chicken and chopped vegetables, and shape into 5 patties.
Heat up the oil in a frying pan, and fry each patty for 1-2 minutes on each side until golden and hot.
Serve with a fried or poached egg.
