- 1 packet quorn mince (300 g, 10 oz)
- 1 onion
- 2 celery stalks
- 2 carrots
- 1 tin chopped tomatoes
- 1 teaspoon dried rosemary
- 1 tablespoon tomato puree
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
- 2 tablespoon vegetable oil
- 1 cup vegetarian stock (broth)
- 2 cloves of garlic
Heat up the oil in a pan over a low heat.
Peel and chop the onions, and sautee them in the pan until they soften.
Chop the celery stalks and carrots, and add them to the pan together with the chopped garlic.
Leave to cook for 2-3 minutes until they begin to soften a bit.
Add the quorn mince, chopped tomatoes, broth and leave to cook for 10 minutes or so on a medium heat until the liquid is absorbed and the veggies are tender.
Add the rosemary, seasoning, tomato puree and stir well.
Garnish with fresh chopped parsley.
