Quorn Bolognese

Ingredients

  • 1 packet quorn mince (300 g, 10 oz)
  • 1 onion
  • 2 celery stalks
  • 2 carrots
  • 1 tin chopped tomatoes
  • 1 teaspoon dried rosemary
  • 1 tablespoon tomato puree
  • ¼ teaspoon salt
  • teaspoon black pepper
  • 2 tablespoon vegetable oil
  • 1 cup vegetarian stock (broth)
  • 2 cloves of garlic

Instructions

  • Heat up the oil in a pan over a low heat.
  • Peel and chop the onions, and sautee them in the pan until they soften.
  • Chop the celery stalks and carrots, and add them to the pan together with the chopped garlic.
  • Leave to cook for 2-3 minutes until they begin to soften a bit.
  • Add the quorn mince, chopped tomatoes, broth and leave to cook for 10 minutes or so on a medium heat until the liquid is absorbed and the veggies are tender.
  • Add the rosemary, seasoning, tomato puree and stir well.
  • Garnish with fresh chopped parsley.
