VANILLA BUTTERCREAM CAKE

A decadent cake topped with strawberries and raspberries

INGREDIENTS: For the sponge – butter, soften – sugar – eggs – self-raising flour –vanilla extract For the buttercream –icing sugar –  butter, soften

INGREDIENTS: –vanilla extract – full-fat milk To decorate –  fresh strawberries – fresh blueberries

To make the sponge, cream the butter and sugar together

Add the eggs one by one mixing well after each addition

Sift in the flour, add the vanilla extract and mix well to get a thick batter.

Divide the batter evenly between 2 cake tins and bake

To make the buttercream, add the icing sugar, butter, vanilla extract and milk to a food processor

Blitz to get a smooth buttercream

Decorate the cake with buttercream

Top with berries and enjoy!
