PUMPKIN ROLL with CREAM CHEESE FILLING

A light sponge made with pumpkin puree and spices, plus a silky maple cream cheese filling, what a treat!

INGREDIENTS: For the sponge – eggs – self-raising flour – baking powder – bicarb of soda – granulated sugar – pumpkin puree –  cinnamon – pumpkin spice

INGREDIENTS: For the cream cheese filling – soft cream cheese – soft unsalted butter butter – icing sugar (confectioner's sugar) – vanilla extract – maple syrup

To make the sponge, sift the flour, add the pumpkin pie spice, baking powder and bicarb of soda.

In a separate bowl, beat the eggs and sugar with an electric mixer for 1-2 minutes until fluffy and pale yellow.

Add the pumpkin puree, and mix to combine.

Combine the dry ingredients with the wet ingredients, mixing well to get a uniform batter.

Transfer the batter to a baking tray and bake for 10-12 minutes

To make the filling, sift the icing sugar and add the butter

Add the cream cheese, vanilla extract and maple syrup and mix well.

Once the sponge has cooled down, spread the cream cheese filling, and roll again.
