INGREDIENTS: oatmeal pumpkin puree milk eggs pumpkin spice maple syrup to serve

Add the oats to a food processor

Blitz to a fine texture

In a large bowl, add the milk, beaten eggs and pumpkin puree

Add the spices to the batter and mix well

Add a ladleful of batter to a lightly-oiled frying pan

Cook the pancake for 1-2 minutes, flip on the other side, and cook for a further 1 minute
