LEMON & ELDERFLOWER DRIZZLE CAKE

A beautifully moist loaf cake that has a fluffy sponge, gorgeous lemon and elderflower drizzle, and an elderflower glaze

INGREDIENTS: For the sponge – butter, soften – granulated sugar – eggs – self-raising flour – baking powder –  lemon – milk

INGREDIENTS: For the drizzle – elderflower cordial – lemon – granulated sugar For the glaze – icing sugar – elderflower cordial

To a large bowl, add the soften butter and sugar and cream well

Add the eggs one by one, beating well after each addition

Sift in the flour and baking powder, and add the lemon zest, then mix again to get a thick batter

Transfer the batter to a loaf tin, and bake

To make the drizzle, mix together the lemon juice, elderflower cordial and sugar

To make the glaze, mix the icing sugar with the elderflower cordial

Pour the drizzle all over the cake while still warm, then glaze once cool. Enjoy!
