My take on the ever popular coronation chicken recipe.

INGREDIENTS: –  cooked chicken – oil – onion – curry powder – bay leaf – tomato puree – brown sugar – red wine – water – dried apricots

INGREDIENTS: – creme fraiche - mayo – salt and pepper to taste – lemon juice – slices of bread

In a frying pan, heat up the oil, and fry the onion until golden

Add the curry powder and the bay leaf, and give it a good stir

In goes the tomato paste - mix well

In a large bowl, add the shredded chicken, chopped apricots, wine sauce, mayo, creme fraiche and lemon juice plus seasoning

Give everything a good stir - the coronation chicken is ready

Serve it as a sandwich filler, salad or with jacket potatoes.
