EASTER CHOCOLATE CAKE

A beautifully moist and fudgy cake that is perfect for your Easter menu

INGREDIENTS: For the sponge – plain flour – cocoa powder – baking powder – bicarb of soda –  sugar –  salt – vanilla extract – boiling water – eggs – milk – vegetable oil

INGREDIENTS: For the buttercream –  butter – icing sugar – mascarpone – cocoa powder To decorate – Cadbury Creme eggs – mini Easter eggs

In a large bowl, mix together the cocoa powder, flour, baking powder, bicarb of soda, salt and sugar

In a separate bowl, add the eggs

Beat the eggs together with the milk, vanilla extract and oil

Combine the wet ingredients with the dry ingredients

Pour in the boiling water, and mix to get a smooth batter

Divide the batter evenly between 2 cake tins and bake

To make the icing, cream together the butter and icing sugar, add the mascarpone and cocoa powder, and mix

Ice the cake with the mascarpone buttercream, then decorate with Easter eggs
