CARROT CAKE  with cream cheese icing

A family-favourite dessert not only for Easter, but also all year round.

INGREDIENTS: SPONGE: – plain flour – sunflower oil – eggs – granulated sugar – brown sugar – baking powder – ground cinnamon – ground ginger – mixed spices

INGREDIENTS: SPONGE: - vanilla extract – grated carrots – chopped walnuts ICING – cream cheese – butter, soften – icing sugar – vanilla extract

In a large bowl, crack the eggs, add the oil, white and brown sugar

Mix well with a hand mixer to get a smooth runny batter

Add the grated carrots, walnuts, baking powder and spices

Mix well using a wooden spoon or spatula

Sift in the flour, and give it a good mix to get a smooth batter

Divide the batter evenly between 2 cake tins and bake

To make the icing, add the sifted icing sugar, butter and vanilla extract to a food processor

Blitz well to get a smooth and silky icing

Decorate the cake with icing, walnuts pieces, sugar decorations and anything else you like! Yum!
