LEMON BLUEBERRY BUTTERMILK PANCAKES

Fluffy, healthy and delicious, a great choice for breakfast or brunch to feed the whole family.

INGREDIENTS: – self-raising flour – bicarbonate of soda – egg – buttermilk – blueberries – lemon zest – cooking oil spray

In a large bowl, sift the flour, add the bicarb of soda, and mix

In a separate jug, beat the egg well with a pinch of salt

To the beaten egg, add the buttermilk and mix again

Combine the dry ingredients with the wet ingredients, plus blueberries and lemon zest.

Mix to get a thick batter

Add a tablespoon of batter to each cavity of the pancake pan

Cook on both sides until golden

Serve them with honey or the sauce of your choice for the ultimate treat!
