Ok, I admit, I am a cold person. In fact, it has to be boiling hot outside for me to even consider taking my socks off. So, since I have embarrassed myself like that, I should be given the right to defend and explain myself. Well, the truth is that, for some reasons, my feet are always cold. Take my socks away, I shall be left in tears like a baby without a dummy. But then, there are days when it is so unbearably sticky and humid, even for my liking. And that’s when a nice and cold smoothie comes to the rescue. You really can get wild with what fruit or veggies to use, any possible combination will be a success. I have also tried Mango and banana smoothie and that tasted superb as well.
But since I am a declared fan of fresh strawberries, I had to use them this time, really. Yesterday I went for a walk with my baby and there was a stand with fresh fruit and veggies right in the heart of the town. I could not believe my eyes, I went nuts and bought all sorts of goodies, including some juicy and heavenly sweet strawberries. When they are in season. they taste fabulous, just like God intended. Not to mention that all fruit and veggies are a lot cheaper when they are in season, apart from actually tasting amazingly well. I always take advantage and buy loads, they are devoured quickly anyway.
For my smoothie, the coconut milk gives a subtle flavour which is hard to beat. To make it even better and creamier, I also used a small banana, and that was the perfect combination. And, by the way, never ever spoil the taste and nutritional value of a smoothie by adding refined sugar. That’s just wrong!
Strawberry and coconut smoothie
- 100 g fresh strawberries
- 150 ml coconut milk
- 1 small banana
- Rinse the strawberries under cold water, remove the leafy stems.
- Peal and slice the banana, then add it to a blender together with the strawberries and the coconut milk.
- Blend until smooth.
- Transfer to a mason jar or glass and chill for at least 30 minutes.
