Finally, it looks like good weather is here to stay, at least for a few days. I so missed the sunshine, can you tell? After a long and cold winter, the +20 degrees C are a blessing.

Now, the real challenge is getting my older daughter to wear t-shirts, she still stubbornly refuses to wear them and cries for a winter coat and hat. Who can ever understand a toddler’s logic, hey?!

Although I guess that after you wear warm clothes for pretty much half of the year, it’s strange to let them go. I get that! but still, I am so happy to be rid of those heavy coats, that I feel I am at least 2-3 kg lighter. Hoorey to that!

So, what to you do when the weather is so nice? You spend a lot of time outside, and at little as possible inside. And when it comes to meals, you want to quickly get something ready, and not worry about being stuck in the kitchen for hours.

And that’s where this chicken and chorizo tray bake comes to save the day. All you have to do is throw everything in the oven, and let it cook, nothing else. Pretty easy, isn’t it?

Have a mentioned what is the best thing apart from the fabulous flavours? It’s ONE PAN, meaning NO MESS, NO WASHING TONS OF PANS. Plus, you get them in the oven, and one hour later you get to enjoy a delicious cooked meal. No need for extra side dishes, you get everything in only one pan.

And that’s what I call being efficient and making the most of the ingredients you have. Just use whatever you have in your kitchen, in case you don’t have cherry tomatoes or peppers. Any other vegetable works fine.

BUT, what makes this dish so deliciously SPANISH is the awesome flavours given by the chorizo. You can feel the smokey paprika flavour, and the suble saltiness, so I opted not to add any extra salt, I really don’t think it’s necessary, unless you really like your food extra salty.

Now, I used boneless chicken thighs, but you can also use chicken drumsticks you if you wish. Or chicken breasts, although you have to make sure you brush it generously with olive oil, as chicken breasts tend to dry up in the oven if they are not coated with sauce or oil.

Ingredients
  • 5 skinless, boneless chicken thighs
  • 1 chorizo sausage
  • 4 large potatoes
  • 1 red pepper
  • 1 yellow pepper
  • a handful of cherry tomatoes
  • 1 onion
  • 4 fresh thyme sprigs
  • 1 tsp dried rosemary
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 4-5 garlic cloves
Instructions
  1. Peel and cut the potatoes into chunks, de-seed and cut the peppers into strips, and peel and cut the onion into wedges.

  2. The chorizo sausage can be sliced or cubed.

  3. Arrange all chicken and vegetables on the tray, leaving the garlic cloves in their skin, otherwise the garlic will become bitter in the oven if cooked for a long time.

  4. Drizzle the olive oil over, and season with smoked paprika, then add the dried rosemary and thyme springs.

  5. Cook in the pre-heated oven for one hour or until the chicken and the vegetables are fully cooked.
