Who doesn’t like a good juicy burger? I know that the beef burger is by far the most popular one, but how about something as tasty, but a lot healthier?
Ground turkey, whether you use only turkey breast or turkey thighs, is an excellent choice if you are looking to replace the good old beef or pork mince. I must say that I use ground turkey on a regular basis, I guess partly because it’s easily available in any large supermarket in the UK.
Chicken mince is not as popular, surprisingly, although you can probably get it from any butcher’s rather than supermarket. And you know what is the killer ingredient in these burgers? Yep, dried tarragon. Just a tablespoon goes a long way to make these turkey burgers so tasty. It’s not a herb I use often, but it’s the perfect match if you cook with chicken or turkey.
How TO make tarragon turkey burgers
Now, it’s nothing complicated, just a few ingredients thrown together, shaped into some nice patties, and grilled to perfection. Easy, right?
- in a bowl, combine the ground turkey, finely chopped onion, dried tarragon, salt, pepper and egg
- use your hands to shape 4 patties
- heat up the grill pan, brush with oil, then grill the turkey patties for about 3-4 minutes on each side
- spread some mayo or ketchup on half a bun, top with lettuce, tomato slices, cheese and the turkey burger, then top with the other half of the bun
Obviously, you can make these burgers your own and add any other ingredients you want, not just what I used. I like to keep them pretty simple, but we all have different tastes, so feel free to use any pickles, onion rings, or any other goodies.
How to keep the burgers from falling apart
Now, if you use turkey thigh mince like I used, it has a higher fat content than the turkey breast one. The one you find in the UK shops has 7% fat, whereas the turkey breast one only has only 2% fat.
The egg and breadcrumbs are the binding agents, they keep the patties together nicely. The extra fat helps keeping the burgers nice and juicy on the grill.
But, you can of course use the turkey breast mince without any problem, but again, don’t omit the egg and breadcrumbs. I would perhaps even add a tablespoon of milk to keep them moist.
How to keep the burgers from sticking to the grill pan
Whether your grill pan is brand new or not quite new, burgers tend to stick pretty badly to it. Once you heat it up, brush the pan with oil, then add the patties.
Leave to grill undisturbed for at least 2 minutes, until you can see the bottom part of the patties is no longer pink. The patties will be easier to flip onto the other side this way.
Low-carb turkey burgers
If you have embraced the low-carb lifestyle, you can still enjoy a good burger by ditching the bun and swapping the breadcrumbs with almond flour.
You can serve the burgers bunless together with a nice salad on the side or other veggies of your choice. And that’s the beauty of homecooking, you have the powder to make any dish your own. And that’s better than any pricy take-away.

- 250 g turkey mince (ground turkey) ( 1/2 lb)
- 1/2 red onion
- 1 tbsp dried tarragon
- 1 egg
- 1/4 tsp salt
- 1/8 tsp ground black pepper
- 2 tbsp breadcrumbs
- 1 tbsp oil to brush the grill pan
- 4 buns
- 2 large tomatoes
- 4 lettuce leaves
- 4 slices of cheese
- ketchup and mayo to taste
In a bowl, combine the turkey mince with the finely chopped onion, egg, dried tarragon, salt, pepper and breadcrumbs.
Use you hands to shape 4 patties.
Heat up a grill pan, brush it with oil, then arrange the patties and grill for about 3-4 minutes on each side or until cooked through.
Halve a bun, arrange the lettuce, slices tomatoes, cheese and turkey burgers, and serve with the sauce of your choice.
