If one of your New Year’s Resolutions is eating healthier and losing those extra kilos that you put on during the festive season, you are not alone. And it is not that difficult either, just a tiny bit of strong will would do. I know that some people love going to the gym and exercising regularly in order to keep fit. Unfortunately for me, l am not a gym girl and would rather cut down on sweets and fatty stuff than exercising. How lazy, l know! I do love walking though. So, once l’ve set my mind on eating healthy food, all l need to do is clearing my kitchen of any temptation. Healthy food is not that boring, nor tasteless, you can still enjoy mouth-watering dishes. Dried or fresh fruit, vegetables and pulses are a must. Less meat would also help. And drink lots of water. No fizzy drinks, no alcohol. I know, January is a tough month. These mozzarella-stuffed tomatoes with sun-dried tomato pesto make such a great starter. High in vitamin C, A and B6, low in calories and super yummy, not to mention that this hardly needs any preparation. No frying, no baking, no headache. Easy, right? And yes, healthy.
Mozzarella-stuffed tomatoes with sun-dried tomato pesto
- 8 medium tomatoes
- 125 g light mozzarella cheese
- 1 tbsp sun-dried tomato pesto
- 1 tsp chopped basil
- 2 tsp chopped dill
- Use a sharp knife to slice the top off the tomatoes.
- With a teaspoon, scoop out the seeds and pulp.
- Cut the mozzarela-cheese ball in big chunks and stuff the tomatoes.
- Top with sun-dried tomato pesto and garnish with chopped basil and dill.
