Cheesy potato tomato spinach quesadillas

Cheesy potato tomato spinach quesadillas with a hint of garlic and basil make a great breakfast, brunch, lunch or picnic idea. Can’t get little ones to eat more veggies or try out new ingredients? You all know already that l like everything cheesy. The cheesier, the better. Same applies to my day to day life, as a matter of fact. Some sort of a romantic, what can l say. So, there’s no surprise l added some cheese to my quesadillas.  But this could actually be the trick to get your kids (especially toddlers) to try something new.

If you have children, I’m sure you’ve all experienced some drama when the kids just refused to eat whatever you cooked because either the texture or the taste were different from what they wanted.  And there’s nothing more disappointing than seeing the food left untouched, especially after all the effort you put into making it. And that’s the better case scenario, when there’s no whinging involved.

Although there is a touch of garlic and basil, they are quite mild, so you can actually tell what you are eating. I know some spices can be so strong, that you can hardly tell what’s on your plate, apart from that obvious spice. Feel free to add chilli too, if you are eating the quesadillas yourself.

Cheesy potato tomato spinach quesadillas

Ingredients:

  • 1 medium flour tortilla
  • 1  potato, boiled
  • 1 tomato
  • a few leaves of fresh spinach
  • 1 knob of butter
  • 40 g Cheddar cheese, grated
  • 3/4 tsp dried basil
  • a pinch of garlic powder
  • a pinch of black pepper

Method:

  • Spread a thin layer of butter on half of the tortilla.
  • Slice the potato thinly, then arrange the slices on the buttery side. 
  • Sprinkle a pinch of garlic powder over the potato slices, then sprinkle half of the amount of cheese over.
  • Arrange the spinach leaves on top of the cheese, then slice up the tomato and arrange a layer over the cheese.
  • Season with black pepper and sprinkle some dried basil, then add the rest of the grated cheese.
  • Fold the other half of the tortilla over.
  • In a large frying/grill pan, arrange the tortilla and cook on one side for a few minutes until golden.
  • Carefully flip it over so the other side can be cooked too, trying to keep everything in place.
  • When ready, cut the quesadilla in 3 and serve immediately.
