French fries with coarse sea salt, a classic side dish enjoyed all over the world.
Having said side dish, l might have to reconsider it. I’m sure you can all relate; as a child, l would have gladly eaten only fries and nothing else. And not because poor mum would not have cooked other 10 more dishes, one more appealing than other, the answer was always the same: “l only want fries”. But then, they are so sinfully delicious, it’s hard to resist them. Ok, they are (deep) fried, so considered not that healthy. Yeah, yeah, nevermind, bring me one extra portion!
Barbeque, burgers, roast, fish? They all scream for some french fries to accompany them on the plate. So dig in, heaven in right there, in front of you. And if guilt hits you afterwards, just remember that one little treat from time to time won’t ruin your waste line. Unless that little treat becomes your everyday treat. Then you might have to make yourself a salad to wash your sins.
Ketchup seems to be the favourite sauce when it comes about fries, although garlic sauce, vinegar, or chilli sauce are also in great demand. In the UK, chips (fries) and vinegar form one sound marriage, althought l must confess l’m not that keen on this combination. I chose to serve mine with coarse sea salt, rather than fine one, as it gives some nice texture to it. Also, some pickled red bell peppers are to die for.
And now, let’s reveal the secret to perfect French fries. Well, it’s quite simple, always fry them in small batches, never ever overcrowd the frying pan, and you’ll get deliciously fries made to perfection. A great alternative to frying is baking in oven. Either as fries or simple roast potatoes. Right, enough talking, let’s have some fries!
French fries with coarse sea salt
- 2 large white potatoes
- 1 cup of sunflower oil
- 1/2 tsp coarse sea salt
- Peal and wash the potatoes with plenty of cold water.
- Cut the potatoes into long sticks.
- Add the oil to a frying pan and fry half the potatoes until golden.
- Remove from the oil and transfer to a plate lined with kitchen towel, so that the excess oil can be removed.
- Sprinkle with coarse sea salt.
- Repeat with the remainig potatoes.
- Serve immediately!
